Super Bowl Recipe: Pakoras

Pakoras: Vegetarian Appetizer served hot with Mint sauce or ketchup!!! Pakoras are made with different vegetables, which are dipped in a besan (gram flour) batter and deep-fried. This recipe uses potatoes, cauliflower, onion and spinach.

Ingredients:
• 1 cup besan (gram flour)
• 1 tablespoon of coarsely ground coriander powder (dhania)
• 2 chopped green chilies
• 2 tablespoons chopped cilantro
• 1 teaspoon salt adjust to taste
• 3/4 cup of water (Use water as needed)
• Oil to fry
• 1 Potato medium thin chopped
• 1 Cauliflower small thin slices
• 1 Onion small, thin sliced
• 1 small bowl of spinach, chopped
• 1 teaspoon ginger-garlic paste
Method:
1. Take bowl and put all the vegetables, add besan, salt, spices .Mix all the ingredients together
2. Add the water slowly to make a smooth batter (batter should be consistency of pancake batter)
3. Next, add the green chilies, ginger-garlic paste and cilantro. Mix well.
4. Make spoon size ball and flatten it, 1/4'thick and deep-fry in oil that is heated to 375°.
5. Fry the pakoras in small batches. The pakoras will take about 4 to 5 minutes to cook.
6. Turn them occasionally. Fry the pakoras until both sides are golden-brown.
7. Drain pakoda on paper towels to extract extra oil and serve hot.
8. Repeat this process. The crispy, delicious pakoras are ready to serve.
